Ingredients

  • Vegetable oil
  • 1 breast of chicken cut into small pieces
  • 200 Grm pork loin  cut the same as the chicken breast
  • 200 Grm cooked peeled prawns
  • 250 Grm long grain rice cooked and cooled
  • 1/2 CUP garden peas
  • 1 Large egg whisked
  • salt & pepper to taste

Method

In a non stick pan on high heat , add enough oil to coat the base and when hot add the chicken and toss until it turns white, add the pork loin pieces and toss until starting to brown then add the prawns. Now tip in the rice and toss it all together you should hear it crackling, you must ensure to keep it moving  “do not let it burn”.Now add the whisked egg at one edge and allow to firm up before breaking it up then add the peas and toss it all together to evenly distribute all of the ingredients throughout the rice. Season to taste with salt and pepper.
