Ingredients

  • Firehouse Rub
  • Full rack baby back ribs
  • Firehouse BBQ Sauce

Method

Firstly remove the thin membrane layer from the underside of the ribs by peeling back one corner to create a pocket, work your fingers around in between the membrane and the ribs to loosen it so you can get a grip and pull the entire membrane off , by removing the membrane this will allow the rub to penetrate from both sides of the ribs .

Spoon a couple of table spoons of the Firehouse Rub over the ribs and massage into the meat until the ribs are a nice red colour, this also tenderises the meat and tightly wrap in foil and leave to marinade in the fridge over night.

Place the ribs in the centre of a Pre heat oven to 150 C /300 F for 2 1/2 Hours then remove the oven and turn it up to 180 C/350 F. Open up the foil and spoon over some of the meat juices then remove from the foil and place on a baking tray, spoon over and coat the ribs in Firehouse BBQ sauce and place back in the oven for 10 minutes and enjoy.

Firehouse Tip

I prepare several racks of ribs up to the foil stage for marinating and then freeze them for cooking at a later date using the cooking instructions as detailed above.
