Makes 2 portions

INGREDIENTS

  • 2 Metal skewers
  • 2 Large chicken breasts or 4 boneless chicken thighs cut into at least 7 pieces per skewer
  • 1 bottle of Piri Piri Marinade ( Nando’s or any supermarket home brand)
  • 1 small onion cut into small squares
  • 1 green pepper cut into small squares
  • 230grms short grain white rice
  • 500ml chicken stock
  • 1 TSP turmeric
  • 2 TBSP’s Piri Piri marinade
  • 1 tbsp vegetable oil
  • 2 foil trays with lids

Method

In a large bowl, place the chicken pieces along with 2/3rds of the marinade, cover and place into the fridge for a few hours but preferably over night.

Wash the rice to remove as much starch as possible, drain and then in a pan pour the rice and add a the turmeric, marinade and stir gently to coat all of the grains, add enough of the chicken stock to cover the rice by about 2 cm’s then bring to the boil. place a lid on tightly and turn the heat off and leave until the stock is fully absorbed and the rice is cooked through, tip the rice out onto a baking tray and allow to cool fully.

Once the rice is cool, heat a large non stick frying pan on high add the vegetable oil then add the rice, tossing frequently to colour the rice and to remove some of the moisture from the grains, once the rice has taken on a golden colour and appears light and fluffy, tip equal amounts into each of the foil trays place the lids on.

Turn the oven onto 180C and switch on a BBQ grill or griddle to high and while it is heating up Thread the chicken, onion and peppers onto the skewers and brush any remaining marinade from the bowl onto the chicken. Place the skewers on to the grill or griddle and brown on each side, you are not going to cook the chicken right through as this will be finished inside the foil tray in the oven to allow the juices from the chicken to infuse with the rice .

Once the chicken has been seared and has grill marks on each side, remove the foil lids and divide each skewer between the trays, drizzle over the remaining marinade and replace the lids. Place into the pre heated oven for 15-20 mins ,remove then either eat straight from the tray or turn out into a bowl, add a blob of Mayonnaise or garlic sauce and enjoy.
