- Firehouse Rub
- 600 Grams Pork Belly Slices
- Firehouse BBQ Sauce
Method
Add a couple of Table Spoons of Firehouse Rub to the pork belly slices and massage into the meat until it turns a lovely red colour, cover and marinate over night in the fridge.
Pre heat the oven to 150 C/300 F because firstly we are going to place the marinated pork slices on a preheated BBQ grill to add a real depth of smokey BBQ flavour, so brush the grill with oil to help prevent the meat from sticking and when the grill is smoking hot , add the pork slices and sear for 1-2 mins on each side . If the grill is hot enough you should have blackened lines across the slices then remove to an oven proof dish
Seal the pork slices in the dish with foil and place in the centre of the pre heated oven and cook for 1 hour 30 mins. When the pork is ready i like to slice into bite size pieces and place the meat into a fresh seal able container , cover with Firehouse BBQ sauce and leave to rest for 10-15 mins, then the pork slices will melt in your mouth, “Beautiful”.
