For the Topping

  • 6 TBSP’s tomato sauce
  • 2 TBSP’s tomato puree
  • 1 tsp garlic puree
  • pinch of salt and pepper
  • 150grm of peeled cooked prawns
  • 1 TBSP mild curry powder
  • 1 sirloin steak ,fat removed and sliced into thin strips
  • fresh basil cut into thin strips
  • grated mozzarella cheese
  • olive/chilly oil

Method

In a food mixer pour the water then add the yeast sugar and the salt and turn the mixer onto a slow setting, slowly add the flour until the dough is formed and is smooth and springing to the touch. Place the dough in a floured bowl and cover with a cloth, place in the fridge ideally over night and it should double in size.

Turn the oven onto its highest heat and if you have a clay pizza plate place it into the oven or else use a large tray because you want this really hot so that when the pizza base hits it  it will start to cook immediately and crisp up as you do not want a soggy base.  Take the dough out of the bowl and on a floured surface knock it back and divide it into three pieces and shape into balls, dust with flour and set aside while you prepare the toppings.

Combine in a small bowl the tomato sauce tomato puree and the garlic puree and the salt and pepper, in another add a TBSP of curry powder to the prawns and stir to cote them until they turn yellow in colour.

On a flat surface sprinkle some course corn meal and with your hands press one of the balls of pizza dough into a disk shape large enough for the pizza plate or tray that is heating in the oven pushing outwards to form a ridge all around the edge and sprikle some of the corn meal over the outer crust. Spread some of the tomato mixture over the pizza base avoiding the outer ridge then sprinkle a little mozzarella over the top, dot the curried prawns and steak around then sprinkle over some more mozzarella. Drizzle over some olive or chilly oil and sprinkle over some of the sliced basil leafs and slide onto the hot pizza plate/tray using a pizza spatula or two kitchen spatulas, it should sizzle as it hits the plate. Cook for around 6-8 minutes or until you can see that it has risen and is a nice golden brown colour.

Slice on a large cutting board drizzle with a little more oil and enjoy.
